Salsify produces elegant, tapering white roots with a subtle flavour variously described as oyster, artichoke, or coconut. It was widely grown in Irish and British kitchen gardens until the early 20th century, when it fell from fashion for no good reason.

Easy to grow in any deep, reasonably well-drained soil. The roots improve after the first frost and can be left in the ground all winter. If allowed to flower in year two, salsify produces stunning purple daisy-like blooms that are magnets for bees.

Sow direct Aprilโ€“May in deep, well-drained soil. Thin to 15cm apart. Harvest from October. Roots improve after frost. Can overwinter in the ground under a mulch of straw. Purple flowers in year 2 are excellent for pollinators.
